RAVALLI – Baker Nancy Martin is back in the kitchen with a smile, and the wait for the first delicious Windmill Bakery doughnuts of the summer is over.

Martin is both the baker and the business owner at Windmill Bakery, and she was diagnosed with cancer last fall. Her treatment cut the season short for the bakery last fall and delayed the opening date this spring. Now, Martin is in remission and the bakery is full of customers again.

“Her being a tough cookie has made everybody happy,” Nancy’s husband Dave Martin said.

The bakery opened for the season last Thursday. While Martin gets her strength back, the bakery will be open Thursday, Friday and Saturday from 7 a.m. to 3 p.m. Later in the season, as her health improves, business hours will expand.

Nancy said her customers seem to be trying to make up for lost time by coming to the store in droves. “All the flour we got for the whole weekend we used up on Thursday,” she said. “We had to go out last night and get more.”

Between opening at 7 a.m. on Thursday and 1:30 p.m. on Friday, Martin used 350 pounds of flour to whip up doughnuts, cookies and brownies.

It’s back to business as usual at the highway-side business. One regular customer approached the counter glad to see the bakery open again. He gave a common order: “I’ll have three doughnuts to go and one to eat on the way,” he said.
