ST. IGNATIUS — Choose a variety of vegetables, which come in a variety of colors. You can find them fresh, frozen, canned, dried or in 100% vegetable juice. Vegetables provide potassium, fiber, folate, Vitamins A and C. Potassium helps control blood pressure. Fiber supports digestion and heart health. Folate (Vit B9) helps form red blood cells, helps tissues grow and cells work. Vitamin A is important for vision, and a healthy immune system. Vitamin C aids in wound healing, skin health and iron absorption. Canned or frozen are just as good as fresh. Try to choose options with little or no added salt. Rinsing canned vegetables under cold water can reduce a significant amount of sodium. (From myplate.gov)
